HIGH PROTEIN AIR FRIED CHICKEN NUGGETS

  • 1 cup (120 grams) panko

  • 1lb (450 grams) boneless, skinless chicken tenderloins

  • breadcrumbs (you should end up with ½ cup extra)

  • 1 tsp (3 grams) garlic powder

  • 1 tsp (2.6 grams) onion powder

  • 1 tsp (2.3 grams) paprika

  • Salt and pepper to taste

  • Cooking spray

  1. Preheat your air fryer or oven to 375°F (190°C).

  2. In a bowl, mix whole wheat breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. This forms your coating mixture.

  3. Cut the chicken tenderloins into bite-sized pieces.

  4. Dip each piece of chicken into the breadcrumb mixture, ensuring they are evenly coated.

  5. Place the coated chicken pieces in a single layer in the air fryer basket, ensuring they are not touching each other. Lightly spray the chicken with cooking spray. This helps to achieve a crispy texture without using excessive oil.

  6. Air fry the chicken at 375°F (190°C) (for about 12-15 minutes, or 20-25 minutes in the oven, flipping halfway through.

  7. Cook until the chicken reaches an internal temperature of
    165°F (74°C) and the coating is golden brown and crispy.

  8. Once done, remove the chicken nuggets from the air fryer and let them rest for a few minutes before serving.
